Roasted Gnocchi Primavera
If you know me, you know that I love an EASY, yet delicious dinner. This roasted gnocchi primavera hits both of those boxes. The thing that I love about a primavera is that it can literally be ANY veggies that you have on hand, and you know how much I love my veggies. Let’s dive right into it!
Gnocchi Primavera Details
There are a few things I added to this that I absolutely love for flavor and for making it top notch. Let’s go over the specifics..
- Gnocchi: For the gnocchi, I went with Trader Joe’s Famous Cauliflower Gnocchi. Another that I love is the Cappello’s Sweet Potato Gnocchi. Or you can use whatever you have on hand!
- Veggies: As I mentioned above, a primavera is very versatile, so you can truly use any veggies that you have on hand. Anything from carrots to bell peppers to squash to tomatoes works! Nothing is off-limits here. I do recommend dicing the veggies thinly into matchsticks. I recommend this knife set that I swear by! It’s cute and effective!
- Seasonings: For the seasonings in this recipe, I used a basic Italian Seasoning (go for organic if you can), mixed with Nutritional Yeast to give a vegan, savory, cheesy flavor, oregano and garlic. I also used some fresh Miyoko’s Dairy Free Mozzarella to top it with! You can use regular as well if you’re not dairy free!
- Protein: This recipe doesn’t call for any protein, but I added in some ground lupin after it baked, or you can easily add a few diced chicken sausages to the pan to bake too!

Ingredients
- 2 bag trader joe's cauliflower gnocchi
- 1/2 red onion, sliced
- 1 c shredded carrots
- 1 zucchini, diced into matchsticks
- 1 yellow squash or zucchini, diced into matchsticks
- 1 red bell pepper, diced into matchsticks
- 1 c grape tomatoes
- 1 tbsp garlic, minced
- 1 tbsp Italian seasoning
- 1/2 c extra virgin olive oil
- 1/2 c nutritional yeast
- 1 tbsp dried oregano
- 1 tbsp garlic, minced
- Sea salt & pepper, to taste.
- 1/4 c shredded vegan mozzarella
- Fresh parsley & basil, for topping
Instructions
Roasted Gnocchi Time!
- Preheat oven to 375 degrees Fahrenheit.
- Toss all ingredients in a large bowl and mix well.
- Place all ingredients on a parchment paper lined baking pan.
- Bake for 25-30 minutes, until it’s reached desired doneness.
- Top with shredded mozzarella & fresh herbs & enjoy!
